Plum & Apple Hazelnut Crisp :recipe:

For the most part of my un-foodie blogging.  Aside from making a gazillion things for arts & craft fairs, is I never use a recipe anymore.  As a Chef you do things so often it becomes a second nature.  So when people like my friend @momitforward asks what the recipe is I have this big “oh shit, I should have written that down” moment.

Eventually I figured it out.  I hope she knows that I had to dig through a trash can to figure out how many pounds and ounces where in the bags, but I did it because a friend in need of a recipe is a friend indeed.  Imagine my surprise after I had tweeted it to her, she named me #momoftheday !  How awesome is that!?!  So in thanks for being named #momoftheday I thought I would take the time from crafting and blog this very yummy recipe for everyone to share.


::Because I was in a rush and wasn’t paying attention I grabbed green apples.  They were so tart I had to soak them overnight in white wine and simple syrup.  If you get any other apple you don’t have to do this, BUT I might say it added a very nice tart flavor to the crisp::



Plum Apple Hazelnut Crisp

  • 1 1/2 pounds of granny smiths 
  • 1 pound plums
  • 1 1/2 TB cinnamon
  • 1 1/2 TB cloves
  • 3 TB cornstarch (or just toss a bunch on till nicely coated)
Mix together apples, plumes, spices, and cornstarch in a bowl.  This recipe made 5 mini loaf pans of crisps.  How big of a pie pan…no clue.  If there is any liquid in the bowl evenly divide it between the pans so you can have a nice juicy crisp.
Hazelnut Crisp




  • 2/3 cup sugar
  • 1 1/2 oatmeal
  •  4 oz butter chilled
  • 1 1/2 cup of hazelnuts
In a kitchen aid mix all the ingredients together until well combined.  A few times I would stop the kitchen aid to help mix in the bigger chunks with my hands.  Place over your crisps and bake at 350 for 30 min.  or until golden brown and the fruit are bubbling.
