I have been promising my friends Megan and Adelepackages for forever…seriously like since I moved here in November. With Megan’s bday coming up I figured now is a good time as any to stop procrastinating and get er’ done. Of course I filled their boxes with pretty hair things, and tons of baked goods. We made some MexiCookies, Bacon Yums, and Ice Cream Cone sugar cookies. My cookie jar is overflowing with “duds”. I didn’t get to take a picture of the MexiCookies, but I will post later on with recipe.
You may be wondering where my cookie challenge posts are..I’m being lazy but I totally feel that this cute Ice Cream Cone cookies fit sorta in the challenge..yes?
Here’s the super yummy Bacon Yums
This cookies are ridiculously good! I had to refrain from eating them all and quickly vacuum sealed them so they could be shipped.
Guess what? I remembered to write down the recipe for you ::cheer:: so here it is.
- 4 strips of cooked bacon chopped into tiny pretty pieces and drained of as much grease as possible
- 1/2 cup toffee chips
You can put the toffee and bacon together in grinder to make a finer chop
- 2 sticks butter- or- 2 cups Lard if you really want to take this all the way
- 1 cup sugar
- 1 egg
- 2 tb vanilla
- 1 1/2 cup whole wheat flour
- 1 1/2 cup ap flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp nutmeg
- splash of milk if needed
Cream your butter and sugar till super fluffy. Add your vanilla and egg and mix until combined. Add your dry ingredients and mix until the dough balls up and away from sides of mixer. If it seems to dry give it another minute and add just a splash of milk to see if it comes together.
You can roll these into balls or cut out cute piggy shapes. Bake at 350 until golden around the edges. Remember color means flavor.
